This past weekend I ran out of my favorite hot sauce, which I purchased from a local vendor in Mexico City last Spring. During the sauces' last meal - I savored the flavors, reflected on my favorite experiences from that trip and what I learned during an incredible cooking class.
One very important thing I learned that day in the cooking class, was the importance of charring the peppers. I did my best to recreate the sauce, although it is certainly not the same but, it's close enough to use on everything!
